Traditional dish season begins in Mexico

The mole de caderas season has begun in Mexico. This traditional dish is prepared using goat meat from animals raised on a special diet in the mountains of the Mixteca region. Its distinctive flavour also comes from local varieties of chilli and tomatoes. In restaurants, mole de caderas is served hot, often accompanied by various side dishes such as traditional tortillas or rice.
